Boyfriend Cookies

 

 

aaaaI am going to  start off  by  saying that of all the  cookies I  make, my  husband  loves these ones the  most. I actually   credit  this  recipe for snagging  my  now husband  of  5 years.  While  we were dating I  would  bake these up  when I  knew  he  was  coming  over and I  would always  send  him home  with some.  They are super  simple and they are  very tasty.

About  12 years ago  Kraft Peanut Butter published this  recipe on their jar and I  have been  hooked ever since.  I  love that they are gluten  free  for those peeps  with  wheat  allergies.   So  here it  is.  The Boyfriend cookie recipe.

1 cup Peanut Butter (this actually works  really nicely  with  natural peanut butter too!)

1/2 cup sugar

1 egg

Chocolate chips to  taste

Mix all the  ingredients together.

Spoon onto a  pan, ungreased

Bake at 350 for  8-10 minutes.  Until they  just  start to  brown around the  edges.  I  let them cool for a  few  minutes on the  pan and  then move them to a  cooling rack. They  aren’t  going to   last  long  so  that might be an unnecessary step.

Valentines Treats

With  Valentines day only a  week away I  figured it   was time  to  get in the  kitchen and  get creating. With   girls in  grades 2 and  4 I  love that I  get to  play.  Less exciting is  the  disaster  zone  my kitchen becomes after  making 50 of whatever treats I come up with. This treat  was no exception. There  was pastel colored chocolate EVERYWHERE but I  think the  mess was  totally  worth it. Don’t you?

Putting the mess aside  these  are  really  easy  to make.  So  easy that  my  girls (ages 7 and 9) helped  every step of the  way.  They love getting in the  kitchen and creating  with  me.

The  first  step  was to  make the  rice krispie squares. If you  don’t  have the  recipe you  can  find it here. I  spread  mine into a large, greased baking sheet because I  wanted them  flat and not  really  thick.

Next I  cut out the hearts. All 56 of them. Don’t  worry about the  scraps,  I’m  sure you  can find  someone to  eat them.  val6I poked a  stick in  each of the  hearts. To  make sure that  they  stayed put I pulled the  sticks out and  dipped them in the  white  melted  chocolate and  put them  back in.  Kind of  like  chocolate glue.  After the  ”glue” is set you are ready for  the fun part.

Melt white  chocolate wafers over  very  low  heat stirring  constantly.  You  really  don’t  want to scorch it.

I double  dipped  my   heart  pops.  I wanted the final  shell to  be  relatively smooth on the  outside and  that  wasn’t  going to happen with  just  one  coat.

I  allowed the  chocolate to harden and  then I  piped on the  sayings.  See?  Easy peasy lemon squeezy.   Well,  maybe when I  get the   chocolate off the  ceiling  my  husband  will agree  with that statement.

Running on Empty Blog Tour

As some of  you  may know, I have been  reviewing  books on The Indie Bookshelf for the last 6 months. Now that I am  back  to  blogging  here, I  thought  it would be  fun to  join in  on the occasional book blog tour and share some of the  books  that I  have been enjoying.

This first tour is for a  book that I absolutely  loved.   I  had the  opportunity to read it in it’s beginning stages and really  enjoyed it. I read it a second time after the  final edit and it was even  better!

Running on Empty is a debut novel, written by L.B. Simmons.  It is the  emotional story of  Alex, a  woman who has it all; a perfect husband, a perfect family and a perfect job until one horrible accident  turns  her life upside down.  Her  husband  is killed in an accident that leaves her heartbroken, grieving and trying to  survive as  best she can. Surrounded by friends and  family  who want so much more for her she continues to live her life, running on empty.

Three years later Alex is trying to just  get  by, parenting  her  three girls, and working to support  her family. Then Blake arrives; gorgeous, caring, and funny Blake who seeks out a  friendship with Alex, but is  repeatedly  pushed away.

Now,  torn  between loyalty towards her dead husband  and  new feelings for  her  childhood friend, Alex must  choose between living in the past or taking the  second chance that  life has given her for a  new  future.

This  book was such an emotional read for me and I  enjoyed every second.  The  struggle  that Alex  faced between letting go  of  her old life and  starting over again was palpable and  left me  aching  for  her.   Her  children  were adorable and  reminded me  of  my own.  The  characters were all so  beautifully  written that they leapt off the  page.

I especially  loved Harlow, Alex’s best friend and quite frankly her one woman support  system.   She  was strong and  caring and  always  had the  right  words, even when they  were  hard to say.  She was everything a  best friend should  be.

The  romance was  very well written and very  clean  which I loved. It  was gentle and  sweet; just perfectly what  Alex needed.
